Tumblr Accountability: 2012: Day Fifty-One
I feel like a champ today.
Breakfast:
- Oatmeal w/ soy milk and jam
- Coffee w/ soy (lots yum)
Snack:
- The rest of the coffee.
Lunch:
- Brown rice, lentils, broccoli, cauliflower, w/ soy sauce and Yumm Sauce (reasonable portions and ZOMG this was soooo good)
- An orange
Snack:
- Vegan chili
- Small apple
Through the day:
- WATER WATER WATER. And a mug of herbal tea.
Dinner:
- (posted a photo earlier)
- Lentil Mushroom Soup: lentils, water, herbs, spices, garlic (and lots), nutritional yeast, Better Than Bullion, balsamic vinegar, soy sauce, and a bit of salt, and this turned out SO well and is damn near fat free.
- Tofu “Steaks” - 2 servings of extra firm tofu, scored and pan-fried in about a teaspoon of extra virgin olive oil, with some salt, tossed with balsamic vinegar as they were finishing.
- Pasta: spaghetti, green beans, salt, olive oil, nutritional yeast. I made enough for two portions and I did not eat BOTH portions WOOT.
- Grape tomatoes with some vidalia onion vinaigrette.
- A few garlic-stuffed green olives
- Basically I had an amazing dinner and it was the most fantastic thing after my run
Dessert:
- Nothing. Too full.
Exercise: Walk halfway to work, all the way home (missed streetcar), and ran four HILLY miles.
Grade for Today: I’ll say A+ - I fucking rocked it today.
What I did well today:
1) I got a new running route and it busted my butt and my quads and that feels like a major accomplishment.
2) I started to legitimately piece together a half marathon training schedule.
3) Look how I ate today! I mean, this was about as perfect as it gets.
4) I did ALL my dishes after cooking and eating when I would normally just let them sit overnight/never do them.
